Unripe Green Banana Flour

Sekaya Green Banana Flour is 100% unripe banana air-dried in 80ÂșC of solar heat and milled to fine powder. It is a non-gluten, free-flowing, neutral aroma and taste flour that substitutes refined wheat flour and other high-glycemic sources of starch such as potato and rice flour.

It has a high naturally-occurring starch content compared to grain-based flours. It has a light neutral color and neutral pH. It has excellent properties in water binding and thickening due to its high content of amylopectin.

The body needs 15-30 grams of resistance starch daily for a healthy digestive system. Green banana flour highly contains resistant starch at 65% of dry weight and insoluble fiber.
